Indian Style Tuna with Wild Rice and Lentils

Ingredients
- 2 packs John West Creations Tuna with Wild Rice and Lentils, Indian Style
- 1 little gem lettuce, washed
- 2tbs natural yogurt
- 2cm cucumber, finely chopped
- few mint leaves, finely chopped
- pinch sea salt
- 2 medium tomatoes, diced
- ½ small red onion, finely chopped
- ½ lemon, juice only
- 1tsp olive oil
- pinch sea salt
- few sprigs fresh coriander, chopped
Step 1
Place the tomatoes and onion in a bowl with the lemon juice, oil, salt and coriander and stir to combine. Set aside
Step 2
Make the dip by mixing together the yogurt with the cucumber, mint and salt. Chill until needed.
Step 3
Chop the lettuce and arrange on two plates. Spoon the John West Tuna Creations over the top (heat according to pack instructions if desired).
Step 4
Serve with the tomato and onion salad and yogurt dip on the side.
