Indian Style Tuna with Wild Rice and Lentils

  • 2 packs John West Creations Tuna with Wild Rice and Lentils, Indian Style
  • 1 little gem lettuce, washed
  • 2tbs natural yogurt
  • 2cm cucumber, finely chopped
  • few mint leaves, finely chopped
  • pinch sea salt
  • 2 medium tomatoes, diced
  • ½ small red onion, finely chopped
  • ½ lemon, juice only
  • 1tsp olive oil
  • pinch sea salt
  • few sprigs fresh coriander, chopped

Step 1

Place the tomatoes and onion in a bowl with the lemon juice, oil, salt and coriander and stir to combine. Set aside

Step 2

Make the dip by mixing together the yogurt with the cucumber, mint and salt. Chill until needed.

Step 3

Chop the lettuce and arrange on two plates. Spoon the John West Tuna Creations over the top (heat according to pack instructions if desired).

Step 4

Serve with the tomato and onion salad and yogurt dip on the side.
