You’ll find that we use the term ‘mouthwatering’ in quite a few of our Wild Alaskan Salmon recipes but in all fairness it’s always with good reason. Take a good, long look at the picture above and you’ll see what we mean. If those two thick slices of toast, spread generously with a savoury, bubbly dressing don’t start to instantly make your mouth moisten and your tastebuds tingle, then we’re not sure what would. And the other great thing about this sensationally tasty snack of cheesy, fishy goodness is that you can rustle it up in just ten minutes flat. Which makes it ideal for a salmon starter, brunch, supper and in fact any time when you want a fantastic feast, fast.

Ingredients

  • 1 can Red or Pink John West Wild Alaskan Salmon (213g)
  • 100g low-fat soft cheese with garlic and herbs
  • 50g mature Cheddar cheese, finely grated
  • 1 tbs chopped fresh dill or chives
  • Freshly ground black pepper
  • 2 thick slices of sourdough or mixed seed bread

Step 1

To prepare our Wild Alaskan Salmon Chive & Cheddar Grills Recipe drain the canned John West Salmon, discarding the liquid. Remove any skin and bones, if wished, then mash the salmon with a fork.

Step 2

Add the soft cheese and about two-thirds of the Cheddar to the salmon. Stir together with the dill or chives and season with a little black pepper.

Step 3

Preheat the grill. Spread the salmon mixture over the slices of bread. Sprinkle the reserved Cheddar over the top, then grill for about 5 minutes until melted and bubbling. Serve at once.
