Step 1
Wash the potatoes and pierce a few times in different places with a fork or tip of a knife. Rub with a little olive oil and a pinch of salt and pepper
Step 2
Place the potatoes in the airfryer and cook at 170°C for 25 minutes. Turn then cook for a further 20-25 minutes at 190°C until crispy and golden brown. Appliances vary so use the tip of a sharp knife or a metal skewer to check that the potatoes are cooked in the middle
Step 3
While the potatoes are cooking, make the filling and prepare your salad
Step 4
Add the sweetcorn, spring onions and yogurt to a bowl and mix well. Add a pinch of pepper then gently fold in the tuna
Step 5
When the potatoes are ready, pop them onto plates and cut a cross in the top. Open them up slightly then load the filling on top. Serve with the salad on the side
Step 6
Tip: If you’re in a hurry, you can start the potatoes off in the microwave then transfer to the airfryer or oven. To do this, wash the potatoes and pierce several times with the tip of a knife or prongs of a fork, then place on a microwaveable plate. Heat on full power for 4 minutes. Turn over and heat again on full for 4 minutes. Rub all over with a little oil and then rub in a pinch of salt and pepper. Transfer to the airfryer or onto a baking tray and into the oven and cook at 190°C for 15-20 minutes for the airfryer and 20-30 minutes for the oven, until golden and crispy (turn half-way through cooking)
