Peppers Stuffed with Salmon, Couscous, Lentils and Harrissa Spices

Ingredients

  • 1 pack John West Creations Salmon, Giant Couscous and Lentils with Harissa Spices
  • 1tsp extra virgin olive oil
  • 2 small red or yellow peppers, washed
  • freshly ground black pepper

Step 1

Heat the oven to 170°C fan/190°C conventional/Gas 5

Step 2

Slice the peppers in half length ways through the stalk, carefully remove the core and discard. Place the peppers cut face upwards onto a baking tray and drizzle with a little olive oil. Bake for 10 minutes until just starting to soften

Step 3

Meanwhile, heat the Salmon Creations according to the pack instructions then divide between the peppers.

Step 4

Serve two halves per person with some green salad or crusty bread on the side if desired.
