PREPARATION METHOD

Place the tomatoes and onion in a bowl with the lemon juice, oil, salt and coriander and stir to combine. Set aside

Make the dip by mixing together the yogurt with the cucumber, mint and salt. Chill until needed.

Chop the lettuce and arrange on two plates. Spoon the John West Tuna Creations over the top (heat according to pack instructions if desired). Serve with the tomato and onion salad and yogurt dip on the side.

  • 2 packs John West Creations Tuna with Wild Rice and Lentils, Indian Style
  • 1 little gem lettuce, washed
  • 2tbs natural yogurt
  • 2cm cucumber, finely chopped
  • few mint leaves, finely chopped
  • pinch sea salt
  • 2 medium tomatoes, diced
  • ½ small red onion, finely chopped
  • ½ lemon, juice only
  • 1tsp olive oil
  • pinch sea salt
  • few sprigs fresh coriander, chopped
