Tuna, Mozzarella & Red Onion Bruschetta

Just in case you didn’t know, bruschetta is a tasty and popular antipasto from Italy, comprising grilled bread rubbed with garlic and topped with olive oil. In this instance, we’ve made it even tastier by adding some Tuna Steak, mozzarella and red onion, so you get a nice, soft and tender savoury topping, with a satisfyingly crunchy base. This simple tuna bruschetta recipe is a very tasty snack, perfect for supper or a starter.

Ingredients

  • 1 110g John West No Drain Fridge Pot Tuna Steak with a little sunflower oil
  • 1 baguette, thickly sliced
  • 1 clove garlic, halved
  • A splash of extra virgin olive oil
  • 85g mozzarella, diced
  • 1 red onion
  • 2 tbs freshly chopped parsley
  • Salt and pepper

Step 1

To prepare our Tuna Brushcetta Recipe get your grill nice and hot. Toast the baguette slices on both sides.
Rub each piece of bread with the cut side of the garlic and drizzle with the olive oil. Set aside.

Step 1

Mix together the diced mozzarella, red onion, chopped parsley and the tuna. Season, and pile onto the toasted baguette.

You can either serve them straight away or pop them back under the grill for 2 or 3 minutes until the cheese has melted… mmm!
