STUFFED JACKET POTATOES WITH CHILLI AND GARLIC TUNA INFUSIONS
Pre-heat the oven to 170ºC fan/190ºC conventional/Gas 5.
Scrub the potatoes then prick a few times with a fork then place on a microwaveable plate and cook for 5 minutes on high. Turn over and cook for a further 5-7 minutes. Transfer the potatoes to a baking tray and bake in the oven for about 15-20 minutes or until cooked through and crispy on the outside.
Carefully halve the potatoes and lay them cut side up on the tray. Fluff the potato a little with a fork then divide each Infusions pot between two potato halves. Finish with a few rocket leaves and some black pepper.
