Delicious Moroccan Couscous With Peri Peri Sardines & Olives Recipe
A deliciously different snack with a dash of the exotic.
To prepare our Peri Peri Sardines Couscous Recipe melt the butter in a large saucepan, add the spice mix and stir over a low heat for 1 minute.
Add the couscous and mix into the butter. Pour over the stock and bring slowly to the boil. Cook the couscous until it’s fully re-hydrated.
Stir in the coriander, green olives and John West Peri Peri Sardines, allowing the sardines to break up a little and to heat through well. Season to taste with salt and freshly ground black pepper and serve.
- 2 120g cans John West Peri Peri Sardines
- 30g butter
- 1 tbs Moroccan spice mix (chermoula)
- 250g couscous
- 400ml vegetable stock
- 1/2 pack roughly chopped coriander
- 12 stuffed green olives, halved
