Grilled Mackerel Pasta Arrabiata

We’re famous for our canned salmon and tuna here at John West, but we promise lots of other delicious and versatile canned fish too. Take our Grilled Mackerel for instance, which is the key ingredient of this appetising Arrabiata grilled mackerel recipe. Fish works just as well as meat with Spaghetti and the strong, distinctive flavour of mackerel makes for a particularly tasty combination. Arrabiata is a classic, spicy pasta dish with plenty of authentic Italian flavours and textures, so try it with our mackerel and have a cold bottle of Chianti handy to complement your meal in style.

Ingredients

  • 1 can John West Mackerel Fillets in Tomato & Chilli Sauce
  • 2 cans chopped tomatoes
  • 1 onion, finely chopped
  • 1 large green chilli, finely chopped (with seeds)
  • 2 garlic cloves, crushed
  • 300g spaghetti
  • 1 tbs olive oil
  • 1 tbs tomato puree
  • 1 tsp mixed Italian dried herbs
  • 1 tsp sugar
  • Salt and pepper
  • Parmesan cheese

Step 1

To prepare our Mackerel Arrabiata Recipe select a medium-sized saucepan and cook the spaghetti according to pack instructions. When cooked, place in a large sieve or colander and drain.

Step 2

In a separate medium saucepan, add the olive oil and fry the onion over a medium heat until soft.
Add the garlic, chilli and mixed herbs and continue to cook for one minute.

Step 3

Pour in the chopped tomatoes and bring to a simmer before adding the tomato puree and sugar.
Taste the mixture and season with salt and pepper before simmering for a further 3 to 4 minutes.

Step 4

Add the cooked spaghetti to the sauce and toss together, making sure all the pasta is coated in the sauce.
Finally, gently fold in the flaked mackerel and divide between your serving plates.

Tip: This dish works perfectly with fresh rocket salad and with freshly grated parmesan cheese. Just garnish with a small handful prior to serving.
