AVOCADO AND BEAN SALAD WITH LEMON AND THYME TUNA

AVOCADO AND BEAN SALAD WITH LEMON AND THYME TUNA

Serves: 2 50p off Infusions

PREPARATION METHOD

Place the tomato, onion, beans and parsley into a bowl and season with black pepper

Drain the dressing from the tins of tuna into a small bowl and whisk together with the wine vinegar

Divide the watercress between two plates then top with the tomato and bean salad, then the avocado. Pour over the dressing and sprinkle on the seeds

Top with the tuna fillets and serve with crusty bread on the side

  • Ingredients
  • 2 tins John West Salad Tuna Fillets in Lemon and Thyme Dressing
  • 1 large vine tomato, diced
  • 1/2 red onion, thinly sliced
  • 1/2 tin borlotti beans in water, rinsed and drained
  • handful fresh flat-leaf parsley chopped
  • pinch black pepper
  • 1-2 tsp white wine vinegar
  • large handful watercress
  • 1 large avocado, peeled, de-stoned and diced or sliced
  • 2 tsp mixed seeds (such as linseed, sesame, pumpkin and sunflower)
  • 1 Crusty bread to serve
