Why is the drained weight lower on the Lemon variety?
For the Lemon variety, the drained weight is set at 70g. This isn’t
because we put less fish in the tin — we pack the same amount of
fish as we do in our Mediterranean and Olive Oil varieties.
The difference comes from the recipe itself. The Lemon variety
uses spirit vinegar and natural lemon juice, which makes the
liquid more acidic. Over time, the fish loses a little moisture while
it’s stored. Because of this, the drained weight decreases slightly
during its shelf life.
