Warm to our Salmon this winter!

When you’ve got a trawler full of famished fishermen to feed like I have, you’re constantly on the lookout for simple, but tasty dishes that keep everyone happy. And if your family is anything like my crew, then they’re hungrier than ever in the winter months!! Which is where John West Salmon comes into play.
We all know that canned salmon is great for salads, dips, mousses and other summer favourites, but don’t forget you can also bake it, grill it and fry it, to create lots of traditional style winter-warming comfort food dishes too. So don’t leave those tins of salmon in the cupboard until the sun comes out, because there’s plenty you can do with them right now.
Salmon Burger - to go
This Salmon Burger recipe is a delicious and healthy alternative to beef, so get cooking…
Start by vigorously whisking an egg in a large bowl, then add 2 cans of John West Salmon and stir together. Add ½ cup of breadcrumbs, 1tsp of lemon juice, 1 tsp of mustard, ½ tsp of salt, ½ tsp of pepper and ½ tsp of garlic powder. Then stir everything together evenly.
Squeeze a small amount of the mixture in your hands and see if it holds its shape. If not, add more breadcrumbs. Alternatively, add more lemon juice or mustard if the mixture is too dry. Form the mixture into patties about ½ an inch thick and then place in the fridge to chill for 30mins – 1 hour. Grill the burgers over medium hot-heat, cooking for 2-3 minutes on each side. Make sure the burger is cooked through and then add to a large bread bun of your choice and serve with a heap of chips. (Remember this recipe for summer, when you can make these delicious salmon burgers taste even more irresistible by popping them on your barbecue.)
