Mackerel, Rosemary and Bacon Creamy Gnocchi
Traditional dish with a delicious fish twist.
INGREDIENTS
- 2 can(s) 110g John West Steam Cooked Mackerel Fillets (Natural â?? with no added brine)
- 400 g gnocchi
- 100 g diced pancetta
- 1 small tub of half fat crème fraiche
- 1/2 bunch of chives, snipped or rosemary, chopped
- 5 tsp freshly grated Parmesan
PREPERATION METHOD
Heat the oven to 200C/gas mark 4.
Cook the gnocchi according to packet instructions and drain. Cook the pancetta in a non-stick pan until golden brown.
Mix the crème fraiche, chives or rosemary and half of the Parmesan together with the John West Mackerel Fillets and season with salt and freshly ground black pepper.
Stir in the gnocchi and pancetta and pile into a large oven-proof baking dish.
Sprinkle the top with the remaining Parmesan cheese and bake in the oven for 15 minutes or until bubbling hot and golden brown.
