Pan Roasted Mackerel with Courgettes and Red Peppers
INGREDIENTS
- 2 x 110 g cans John West Steamed Cooked Mackerel Fillets (In a little Olive oil)
- 4 x red pepper, sliced seeds removed
- 1 tbs breadcrumbs
- 50 g melted butter
- 1 tsp olive oil
PREPERATION METHOD
Pre heat the oven to 200C/ 400F/gas 6.
Heat an oven-proof pan over a medium heat, add a splash of oil and arrange the sliced courgettes to cover the bottom of the pan.
Season with salt and pepper, lower the heat and add the red pepper and then arrange the John West mackerel fillet over the top.
Scatter with the breadcrumbs and pour over the melted butter and place into the oven to cook for 10 minutes.
When the top is golden brown remove from the oven and allow to cool slightly. Serve straight from the pan.
