Steak, Chunks and Flakes
Steak packs consist of a solid block of loin which has been cleaned carefully to remove all skin and bone. Main usage is for salads because of the nice pieces of Tuna.Chunks consist of similar pieces of tuna loins as in Steak packs but more loosely packed so they separate easily for convenience. Chunks have a very broad usage being ideal for salads, sandwiches and both hot and cold recipes.John West also sells flaked sandwich Tuna. This is the same quality tuna loins which are in the Steak and Chunk packs which have been flaked for greater convenience. This Tuna is ideal for sandwiches.
Tuna species
You might be surprised to discover that there are many types of Tuna for example- Skipjack, Yellowfin, Albacore and Tongol. John West uses mainly Skipjack and Yellowfin Tuna because of their wonderfully firm texture, mild flavour and because of its consistently excellent quality.
Yellowfin
Yellowfin is noticeably lighter in colour, and has a distinctive, succulent texture. Great for salads or an open continental sandwich when you really want a treat.
Skipjack
Skipjack is the most popular Tuna variety in the UK. It is slightly darker in colour than Yellowfin, with a less substantial and exceptionally tender texture.
