Sardine, Cress and Hummus in Pita

Ingredients (Serves 2)

  • 2 pita breads
  • 2 or 3 tbsp hummus
  • 1 carrot, peeled and grated
  • a large handful of washed mustard and cress
  • 1 x 95g can John West Boneless Sardines in sunflower oil, drained
  • Salt and pepper

Method

  1. Warm the pita breads (in the toaster if you are careful) and make a pocket in each.
  2. Spread plenty of hummus inside the pita, add the grated carrot and mustard and cress.
  3. Share the Sardines between the two pitas, on top of the cress and press the pita closed.
