Greek Sardine Salad

Ingredients (Serves 2)

  • 1 x 95g can of John West Boneless Sardines in sunflower oil, drained
  • 55g/2oz black olives (preferably kalamata)
  • 140g/5oz cherry tomatoes, halved
  • 85g/3oz feta cheese, diced
  • ½ cucumber, de-seeded and diced
  • 2 – 3 tbsp olive oil
  • 1 tbsp white wine vinegar
  • Salt and pepper

Method

  1. Put the Sardines into a bowl and break them up lightly with a fork. Add the olives, tomatoes, feta cheese and cucumber.
  2. Drizzle with olive oil and white wine vinegar and mix gently.
  3. Season to taste with salt and pepper.
